Ingredients

Scale
  • 2 slices sturdy bread (sourdough or whole wheat recommended)
  • 1/2 cup leftover roast turkey, sliced
  • 2 tablespoons cranberry sauce
  • 1/4 cup leftover stuffing (optional)
  • 1 tablespoon mayonnaise
  • 1 teaspoon butter (optional, for toasting)
  • Lettuce leaves (optional)
  • Gravy (optional, for open-faced version)
  • Cheese (optional, for open-faced version)

Instructions

  1. If desired, lightly toast your bread slices. You can also spread a thin layer of butter on the outside of each slice and toast them in a pan for extra flavor and crispness.
  2. Spread mayonnaise on one slice of bread.
  3. On the other slice, spread the cranberry sauce.
  4. Layer the sliced turkey over the mayonnaise.
  5. If using, add a layer of stuffing on top of the turkey.
  6. Add lettuce leaves if desired.
  7. Close the sandwich with the cranberry-sauce-covered bread slice.
  8. For an open-faced version, place the turkey and stuffing on one slice of toasted bread, top with cheese if using, and warm under a broiler or in a toaster oven until cheese is melted. Pour warm gravy over the top.

Notes

  • For a hot sandwich, consider adding a slice of cheese and warming the sandwich in a pan or panini press.
  • Don’t be afraid to experiment with other Thanksgiving leftovers like mashed potatoes or green bean casserole.
  • Using sturdy bread or rolls will help prevent the sandwich from becoming soggy.
